Göreme is the emblematic village of Cappadocia — a small town of 2,000 inhabitants set in the heart of Turkey's most extraordinary landscape, surrounded by fairy chimneys (peri bacaları) sculpted by 30 million years of erosion. Here, within a 5 km radius, the essential Cappadocian sites concentrate: the Göreme Open Air Museum (UNESCO), the valleys (Rose, Red, Love, Pigeon), the troglodyte cave hotels and the launch point of most hot-air balloons that rise every morning over the region.
The Göreme Open Air Museum (Göreme Açık Hava Müzesi), 2 km from the village, is the region's heritage jewel. This former Byzantine monastic complex (10th-12th centuries) brings together about ten rock-cut churches carved in volcanic tuff and decorated with frescoes whose pigments remain vivid after 1,000 years: the Karanlık Kilise (Dark Church, best preserved, 200 TRY supplement), the Tokalı Kilise (Buckle), the Çarıklı Kilise (Sandal), the Yılanlı Kilise (Snake). Scenes depict the life of Christ, Eastern saints, the Annunciation, the Nativity.
But Göreme's signature experience is the sunrise hot-air balloon flight. Every morning (weather permitting), 100 to 200 multicoloured balloons take off simultaneously from Göreme and Ürgüp platforms for 1 hour at 30-600 m altitude over the valleys — one of modern travel's most iconic photographs. Take-off 5-6am, return 7-8am with breakfast and champagne celebration. Rate €150-180/person (book 2 months ahead recommended). For travellers not flying, Göreme's Sunset Point offers the best ground view of balloon take-off at sunrise and sunset over fairy chimneys.
Göreme's cave hotels — troglodyte hotels arranged in the volcanic tuff — are integral to the experience. Sultan Cave Suites, Kelebek Special Cave Hotel, Mithra Cave Hotel offer designer suites in millennium-old caves (€50-300/night). The terraces of these hotels at sunrise are the other privileged observation spot for the balloon ballet.

Our verdict
Göreme is the epicentre of Cappadocia and the ideal base for 3-4 days in the region. Book your cave hotel and balloon flight 2 months ahead in high season. Come in May-June or September-October to combine ideal weather, reliable flights and manageable crowds. Treat yourself to at least one sunset hike in Rose Valley, one sunrise balloon flight, and a traditional testi kebab dinner in an authentic cave restaurant (Topdeck, Seten, Old Greek House). It's one of Turkey's most striking destinations — an absolute must.
