Cappadocia offers a diversity of experiences that few regions in the world can match — aerial, archaeological, natural, gastronomic. Here are the must-sees.
Sunrise hot-air balloon flight — the signature experience, to book 2 months ahead. Take-off at 5-6am depending on season, 1-hour flight at 30-600 m altitude above the Göreme valleys, return at 7-8am with breakfast and champagne celebration. Rate €150-180/person (standard), €250-350 (luxury 4-8 persons). DGCA-certified companies: Royal Balloon, Voyager, Butterfly, Kapadokya Balloons. Flight cancelled in case of strong wind (40-60% in winter, 10-20% in summer — systematic refund).
Göreme Open Air Museum (UNESCO) — heritage must-see. Concentration of about ten 10th-12th century Byzantine rock-cut churches (Tokalı, Karanlık 'dark church', Çarıklı 'sandal church', Yılanlı 'serpent church'), decorated with frescoes whose pigments are still vivid. Visit 1h30-2h. Entry 750 TRY (€23), 200 TRY supplement for Karanlık Kilise (the best preserved). Go early morning (opening 8am) to avoid crowds.
Valley hikes — accessible to all levels. Rose Valley + Red Valley: 3-4h, one of the most beautiful hikes in Turkey, best done late afternoon for the golden light. Pigeon Valley (Güvercinlik): 1h30, easy trail between Göreme and Üçhisar with panoramic view. Love Valley: 1h, phallic chimney landscape. Ihlara Valley: 4h over 14 km, canyon with rock-cut churches and river — the most exotic. Avoid midday heat in summer.
Underground cities: Derinkuyu (the deepest, 8 open levels, 1h30 visit, 750 TRY) and/or Kaymakli (the widest, 4 open levels, 1h visit, 650 TRY). Claustrophobics abstain (narrow passages). Avoid midday (crowds, corridor heat).
Üçhisar — perched village around its citadel, a rocky pinnacle dug on multiple levels that dominates the entire region. Climb by stairs (15 min), 360° panoramic view of valleys and Mount Erciyes. Entry 150 TRY (€5). Go at sunset.
Avanos — village on the banks of the Kızılırmak River (the longest in Turkey), famous for its pottery since Hittite times. Traditional workshops (Chez Galip, Sıtkı Olcar) where you can observe and participate in throwing. Souvenirs: ceramics with Ottoman motifs, Iznik dishes, vases. Avoid Göreme tourist shops and buy directly in Avanos.
Cappadocian vineyards: visit and tasting at Turasan (Ürgüp, the largest producer, free visit), Kocabağ (Uçhisar), Kavaklıdere. Wines based on indigenous grapes (Emir white, Kalecik Karası red, Boğazkere full-bodied red). Harvests in September — festive atmosphere.
Evenings — traditional testi kebab dinner in a Göreme or Üçhisar cave restaurant (Topdeck, Seten, Old Greek House). Whirling dervishes ceremony at the Seljuk caravanserai of Sarıhan (45 min drive, 1h30 show, €30/person) — authentic spiritual experience different from tourist shows.
