Viñales is lived mostly outdoors. The typical day begins at sunrise at the Mirador de los Jazmines, 15 minutes from the village on foot or by taxi — the panoramic view over the valley and the mogotes emerging from the morning mist is one of the great moments of any Cuban trip. Photographers set up from 6am in the dry season.
The horseback ride through the valley is the signature activity. Setting out from the village (€5-8/hour, €25-35 for 4 hours with guide), the ride crosses tobacco and manioc plantations, skirts the mogotes, stops at a tobacco finca for a cigar-rolling demo and tasting, and returns through the rural hamlets. No riding experience required — Cuban horses, small and gentle, suit beginners. The walking version covers the same routes for those who prefer (15-20 km, 5-6 hours).
The caves are integral to the karst landscape. The Cueva del Indio (5 km north of the village) is walked (200 m) then explored by boat on the underground river (€5, 10 min) — touristy but accessible. The Gran Caverna de Santo Tomás (46 km of galleries, Cuba's largest cave system) offers guided caving from easy (€15, 1h30) to more demanding (€40, 4h) — equipment provided, ideal for enthusiasts. The Cueva de la Vaca has a natural swimming pool to cool off after walking.
The Mural de la Prehistoria (€5 entry) is a monumental fresco (180 m long, 120 m high) painted on a mogote wall in 1961 under Castro — aesthetically debated but with a local restaurant below serving memorable Cuban grills. The Los Acuáticos community (4 km north-west) is a small farming community with unusual beliefs in the therapeutic virtues of water — a guided visit with meeting is possible.
In the evening, the village settles back into its peaceful pace. The paladares Casa Verde, La Berenjena and Buena Vista serve generous traditional cuisine (Creole chicken, ropa vieja, rice and black beans) for €12-18 per person. The Polo Montañez bar on the central park hosts evening Cuban music concerts — a guaranteed village atmosphere.
